This smoothie was made with: 1 mango, 1 lime (squeezed), 1 lemon (squeezed), 2 cups of baby lettuce mix, 5 large mint leaves, and coconut water as needed slightly modified from The Healthy Green Drink Diet: Advice and Recipes to Energize, Alkalize, Lose Weight, and Feel Great Jason Manheim.
The author calls this drink Mango-Mint-jito which is a version of a virgin Mojito. It has a wonderful aroma and and is very delicious. It is my favorite one so far, and the baby lettuce blends nicely with the handheld blender. Any green could be substituted for the baby lettuce but I can’t promise that it will taste just as good. I bought all my ingredients from Trader Joes and the baby lettuce mix comes in a bag which makes it convenient. In fact all the greens I bought for my green smoothies are all in bags (I love simplicity and convenience). Again, this is an awesome green drink 🙂

I have really gotten into making smoothies for over a month now ever since I got a Cuisinart handheld electric blender. The cleanup is even easier than a traditional blender which is why I am in love with it. I first bought it to make baby food for my 8 month old and then began making smoothies for myself, mainly fruit smoothies with fresh and frozen fruit mixed with almond milk or Silk soy fruit, and would toss in a tablespoon of Coffeebean’s vanilla powder for extra sweetness. It was a good starting step for me because I hardly ate fruit or vegetables and was starting to realize that I am not getting any younger and really need to focus on my health. Good health starts with a good diet. I am no salad eater and it is not appealing to me at all so I thought it would be a good idea to incorporate greens with my smoothies. I hopped on Amazon and purchased Manheim’s book and stopped by Trader Joes to pick up ingredients for the first smoothie. The smoothie is very tasty as its mostly fruit for beginners like me which does a fantastic job of hiding the kale taste. I munched on a piece of kale to see how it tasted and blech; there was definetely a reason why I did not eat greens all that much. I did not taste the kale at all in the smoothie. The kale was blended up in to bits, which a better blender may be needed to make the kale even finer, but I honestly didn’t mind the “pulpy” texture. It was yummy and I will have this again this week. Tomorrow, I will be trying Mango-Mint-jito. More blogs to follow 🙂
